- 1 organic lemon (zest and juice)
- 150g of all-purpose flour
- 150ml of peanut oil
- 50g of granulated sugar + extra for decorating
- 8g of vanilla baking powder
- 1 egg
- Extra peanut oil for frying
- These quantities will yield 4 servings.

- In a large bowl, whisk together the egg and sugar using a fork.
- Add the peanut oil and continue mixing. Grate the lemon zest into the bowl.
- Cut the lemon in half and squeeze the juice, then add the filtered juice to the mixture.
- Mix well. Sift the flour and baking powder directly into the bowl and combine until smooth and uniform.
- In a large pot, heat plenty of peanut oil until it reaches smoking point.
- Ensure the oil reaches 170°C (340°F) using a kitchen thermometer. If you don’t have one, drop a bit of batter into the pot; it should float to the top and sizzle immediately.
- Prepare a plate with granulated sugar and keep it handy.
- Now proceed with frying. Drop a large spoonful of batter into the hot oil and fry until golden on all sides. Fry a few fritters at a time to avoid lowering the oil temperature too much. Remove the fritters using a slotted spoon and drain on paper towels to remove excess oil, then roll them in granulated sugar and enjoy them hot.
