  • 3 potatoes
  • 1 bell pepper, diced
  • 1 carrot, peeled and grated (Julienne style)
  • 1 onion, chopped
  • 120 grams of flour
  • 1 egg
  • 100 ml of milk
  • 100-150 grams of grated low-fat cheese or cottage cheese
  • A drizzle of extra virgin olive oil (EVOO)
  • Chopped parsley, to taste
  • Pepper, to taste
  • Salt, to taste

How to make Delicious Savory Potato, Pepper, and Carrot Pizza Recipe:

  1. First, peel the potatoes, then grate them using a vegetable peeler. Place the grated potatoes in a bowl, cover with water, stir with your hands, then drain them in a colander and set aside.
  2. Drizzle some EVOO into a non-stick skillet, add the chopped onion, stir, and cook until it becomes translucent.
  3. Now add the grated carrot, diced bell pepper, salt, and pepper. Stir, let them soften, and turn off the heat.
  4. Transfer the grated potatoes into a bowl, add the carrots, bell pepper, and chopped parsley, and set aside.
  5. Break the egg into a small bowl, season with salt, and beat well with a hand whisk. Add the milk and flour, mixing until you get a smooth batter.
  6. Pour the batter over the potatoes, carrots, and bell pepper mixture, stirring until it becomes a soft, compact consistency.
  7. Line a non-stick, oven-proof skillet (or a baking pan) with parchment paper, grease it with EVOO, place the mixture on top, and spread it evenly.
  8. Bake in a preheated oven at 350°F (180°C) for 30-35 minutes.
  9. After baking, sprinkle the surface with the grated cheese (or crumble cottage cheese by hand) and bake for another 15 minutes at 350°F (180°C) before serving.
