Ingredients:

  • 3 potatoes

  • 6 cherry tomatoes, chopped
  • 4 eggs
  • 200g sour cream
  • 150g light cheese (like low-fat mozzarella)
  • 1 bunch of green onions, chopped
  • A few glugs of extra virgin olive oil
  • Paprika to taste
  • Oregano to taste
  • Salt to taste

Optional Salad Ingredients:

  • 1 avocado, peeled and diced
  • 8 cherry tomatoes, quartered
  • 1 cucumber, sliced
  • A handful of arugula (rocket)
  • Juice of 1 lemon
  • A drizzle of extra virgin olive oil
  • Pepper to taste
  • Salt to taste

How to make Potato Casserole:

  1. First, peel the potatoes and cut them into wavy rounds. Place them in a round glass baking dish, season with salt, paprika, oregano, and a generous drizzle of extra virgin olive oil. Mix well and bake for 25 minutes at 200°C (about 390°F).
  2. In the meantime, crack the eggs into a bowl, add a pinch of salt, and whisk them. Add the sour cream and mix well until you get a smooth batter.
  3. Add the chopped green onions and chopped cherry tomatoes to the batter and mix well to combine all the ingredients.
  4. Pour the batter over the baked potatoes in the dish, then top with chopped sausages and grated cheese. Bake in the preheated oven for another 25 minutes at 200°C (about 390°F).
  5. For the optional salad, place the sliced cucumber in a bowl, add quartered cherry tomatoes, arugula, diced avocado, lemon juice, salt, pepper, and a drizzle of extra virgin olive oil. Mix well to dress everything and serve the salad alongside your potato casserole.
