Delicious Potato and Zucchini Pie: A Family-Friendly Dinner…

For a delightful dinner that even kids will love, a savory pie made with grated potatoes and zucchini (courgettes) is the perfect main course. Not only is it incredibly tasty, but it’s also healthy and wholesome. It’s super easy to prepare and will become your little ones’ favorite dinner. You’ll need just a few ingredients to create a light and nutritious appetizer or main dish.

For the filling, you can use any cheese of your choice, but be mindful of calories. It’s best to choose a soft cheese like mozzarella. As for the ham, you can also use other types of cold cuts, always opting for leaner options like turkey breast or low-fat salami. The choice is yours! Now, let’s see how to prepare this savory potato and zucchini pie.

Ingredients :

  • 3 potatoes
  • 2 zucchini (courgettes)
  • 2/3 cup (80g) all-purpose flour
  • 3 eggs
  • 3.5 oz (100g) sliced cooked ham

  • Olive oil, as needed
  • Breadcrumbs, as needed
  • Oregano, to taste
  • Black pepper, to taste
  • Salt, to taste

How to make Potato and Zucchini Pie:

  1. First, peel the potatoes, grate them, and squeeze out excess moisture with your hands. Place them in a bowl and add the grated zucchini (with skin on).
  2. Now add the eggs and mix with a spatula. Incorporate the flour, stir, and season with salt, pepper, and oregano. Mix well.
  3. Grease a square ceramic baking dish with olive oil and dust with breadcrumbs. Spread half of the mixture in the dish, top with grated cheese and ham, then cover with the remaining mixture.
  4. Finally, bake in a preheated oven at 400°F (200°C) for 35 minutes. Once done, slice and serve.
  5. This savory pie is perfect for a family dinner or as a crowd-pleasing dish for gatherings. Enjoy your meal!
