This savoury pizza is made by preparing the base with potatoes, carrots, and bell peppers. It has several nutritional advantages over a classic pizza, as it uses less flour and contains more fibre. Potatoes provide complex carbohydrates and are a good source of potassium and vitamin C. Carrots are rich in beta-carotene, B vitamins, and fibre. Bell peppers contain vitamins A and C, antioxidants, and are low in calories. The combination of carbohydrates from potatoes and carrots with the fibre and vitamins from the vegetables makes the dish satisfying and nutritious. Ingredients:

  • 1 potato
  • 1 carrot, peeled and julienned
  • 1 red bell pepper, cut into strips
  • 1 onion, minced
  • 1 cup (120g) all-purpose flour
  • 1½ cups (150g) grated light cheese (such as reduced-fat cheddar)
  • ⅔ cup (150ml) milk
  • 1½ tbsp (20ml) extra virgin olive oil
  • 1 egg
  • 1 tsp salt + extra to taste
  • ¼ tsp pepper
  • Chopped parsley to taste

How to make The Ultimate Vegetable Pizza:

  1. Peel and julienne the potato. Place in a bowl, cover with water, and let sit for 15 minutes.
  2. Heat a drizzle of olive oil in a non-stick pan. Add the minced onion and cook until soft.
  3. Add the peeled and julienned carrot, stir, and cook until softened. Add the sliced bell pepper, stir, and cook for a few minutes. Remove from heat.
  4. Drain the potatoes and transfer to a bowl. Add the sautéed vegetables and chopped parsley. Mix with a spatula and set aside.
  5. In a separate bowl, beat the egg. Add flour, milk, 1 tsp salt, and pepper. Whisk to obtain a smooth, homogeneous batter.
  6. Pour the batter over the vegetables and mix thoroughly to obtain a soft, uniform consistency.
  7. Line a round baking tin with parchment paper. Spread the mixture evenly in the tin.
  8. Bake in a preheated oven at 350°F (180°C) for 30-35 minutes.
  9. Sprinkle the grated cheese over the surface and bake for an additional 15 minutes at 350°F (180°C).
  10. Allow the savoury pizza to cool slightly before serving.
