Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons olive oil (for frying)
  • 1/2 cup (120ml) sour cream
  • 2 cloves of garlic, minced
  • Fresh chives for garnish

How to make Zucchini Fritters:

  1. Prepare the zucchini: Place the grated zucchini in a colander and sprinkle with salt. Allow it to sit for about 10-15 minutes to draw out excess moisture. After the time has passed, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  2. Mix the batter: In a mixing bowl, combine the squeezed zucchini, flour, grated Parmesan cheese, black pepper, and garlic powder. Stir in the beaten eggs until the mixture is well combined and holds together.
  3. Cook the fritters: In a large skillet, heat the olive oil over medium heat. Using a tablespoon, scoop the zucchini batter and carefully drop it onto the skillet, flattening slightly with the back of the spoon to form fritters.
  4. Fry until golden: Cook for about 2-3 minutes on each side, or until they are golden brown and crispy. You may need to do this in batches to avoid overcrowding the skillet.
  5. Prepare the topping: While the fritters are cooking, mix the sour cream with the minced garlic and add salt and pepper to taste.
