Creamy Courgette Turmeric Pasta : Simple Dinners for Every Day…

Pasta with zucchini and turmeric is a tasty, light and, above all, very simple and very quick first course to prepare.
Yes, this pasta and zucchini is really special. Embellished with turmeric, smoked paprika and herbs, it will be the perfect dish for healthy eating with taste. Moreover, it can be prepared in no time and without any sautéing. All you need to do is cook the pasta together with the zucchini (for me, whole-wheat farfalle is just perfect) and … voila … simply toss it in a large bowl with the sauce.

Ingredients :

  • 360g (12.7 oz) pasta (whole wheat option available)
  • 700g (24.7 oz) zucchini (courgettes)
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika (optional)
  • Fresh basil, to taste
  • Fresh mint, to taste
  • Fresh parsley, to taste
  • Salt, to taste
  • Extra virgin olive oil, as needed
  • Grated Grana Padano DOP cheese, to taste
    (If unavailable, use Parmesan cheese)
  • 1 clove of garlic

How to make Creamy Courgette Turmeric Pasta:

  1. Boil water in a pot. Meanwhile, heat oil with a garlic clove in a pan.
  2. Wash, split, and slice zucchini into rounds.
  3. When water boils, add salt and zucchini. Once boiling resumes, add pasta.
  4. Remove garlic from oil. Add turmeric, smoked paprika, chopped parsley, mint, and basil to the pan.
  5. Before draining, reserve 2-3 tablespoons of pasta cooking water.
  6. Mix the reserved water with the seasoned oil in a bowl.
  7. Drain pasta and zucchini, transfer to the bowl with the dressing.
  8. Stir continuously until well mixed and creamy.
  9. Add a generous handful of grated cheese and mix well.
  10. Serve and enjoy your pasta with zucchini and turmeric.
