Apple strudel, a classic recipe too good not to try. Rich in apples, with raisins and pine nuts , it is flavored with lemon and cinnamon , all enclosed by an irresistible crisp pastry. I love to serve it with a dollop of whipped cream as dessert , but I also find it perfect for breakfast and any time of day.

Apple Strudel Ingredients:

For the filling:

  • 1kg / 2¼ lbs Apples (Golden Delicious, Bramley, or Granny Smith)
  • 80g / ½ cup Sultanas / Golden raisins
  • 70g / ½ cup Pine nuts
  • 1 Unwaxed/organic lemon (zested and juiced)
  • 1 tbsp Ground cinnamon
  • 3 tbsp Caster sugar / Granulated sugar / Light brown sugar
  • 50g / 3½ tbsp Butter / Unsalted butter
  • 70g / ¾ cup Breadcrumbs

Additional ingredients:

  • 20g / 1½ tbsp Melted butter
  • 2 tbsp Icing sugar / Powdered sugar

How to make Apple Strudel:

  1. In a bowl, put sifted flour. Add water, oil, egg, salt, and sugar. Work in bowl, then on surface until smooth and elastic.
  2. Beat dough repeatedly flat. Cover with bowl and let rest for at least 30 minutes.
  3. Soak raisins in water or rum.
  4. Peel and core apples, cut into slices. Add lemon zest and juice, mix well.
  5. Melt butter in a pan, toast breadcrumbs, then cool.
  6. Add sugar, pine nuts, cinnamon, and squeezed raisins to apples.
  7. Roll out dough thinly using a rolling pin and hands.
  8. Sprinkle with breadcrumbs (can mix with apples).
  9. Arrange apple mixture with raisins and pine nuts on top of dough.
  10. Roll up dough into classic strudel shape.
  11. Brush with melted butter and bake in ventilated oven at 180 °C (350°F) for about 45 minutes.
  12. Remove from oven, let cool, and serve with powdered sugar.
