Fragrant, easy and very tasty, Apple Cookies are without butter in the dough, so simple to make that you will just have to work all the ingredients in the bowl with a hand whisk or spatula to make them. These oil cookies with apples in the dough are too good and you will see that as soon as they are made they will disappear, yummy simple homemade cookies perfect for breakfast and snack for the whole family. I flavored the apple cookie dough with cinnamon powder, you can put grated orange or lemon zest to taste, but also a vanilla bean. With the amounts I give you, they come out to about 25 medium-sized cookies, if you want to make them larger they come out to about 18 pieces.

Ingredients :

  • 2 eggs
  • 120g (1/2 cup + 1 tablespoon) granulated sugar
  • 100ml (1/3 cup + 1 tablespoon) sunflower oil
  • 350g (2 3/4 cups) all-purpose flour
  • 16g (4 teaspoons) baking powder
  • 2 Golden Delicious apples
  • Powdered sugar (icing sugar), as needed for dusting
  • 2 teaspoons ground cinnamon

How to make Soft Apple Cookies:

  1. In a large bowl, combine the eggs and sugar. Mix well using a hand whisk.
  2. Pour in the sunflower oil and whisk again to incorporate.
  3. Add the flour, baking powder, and ground cinnamon to the bowl. Start with 2 teaspoons of cinnamon, adjusting to taste if desired. Mix well with the whisk until the dough becomes more compact, then switch to a spatula and continue mixing until a ball forms that pulls away from the sides of the bowl.
  4. Wash, dry, peel, and cut the apples into small cubes.
  5. Add the apple cubes to the dough and knead by hand to incorporate them evenly.
  6. Preheat the oven to 180°C (350°F) for a conventional oven.
  7. Line a baking sheet with parchment paper.
  8. Using two spoons, drop mounds of dough onto the prepared baking sheet, leaving space between each cookie as they will expand during baking.
  9. Bake in the preheated oven for about 15-20 minutes.
  10. Once baked, remove from the oven and let the cookies cool completely on the baking sheet.
  11. Dust the cooled cookies with powdered sugar (icing sugar) before serving.
