Special stuffed potatoes are a tasty and perfect dish to really please everyone, an easy recipe for everyone to make, you will see they will disappear in no time.

Potatoes have always been the ‘winning ingredient that everyone can cook imaginatively by adding just a pinch of imagination. Recipes with potatoes are favorites of young and old alike, simply cut into matches , fried or baked it takes very little to make dinner with them.

Ingredients:

  • 400g (14 oz) potatoes (already boiled)
  • 4 small hot dogs
  • 100g (3.5 oz) smoked mozzarella or provolone cheese
  • 30g (1 oz) breadcrumbs
  • Salt, to taste
  • Extra virgin olive oil, as needed
  • Parsley, to taste

How to make Easy Oven-Baked Stuffed Special Potatoes with Provolone Cheese:

  1. Peel the potatoes and boil them for 20 minutes until very tender.
  2. Drain the potatoes and let them cool, then place them in a bowl.
  3. Mash the potatoes very well until they form a puree. Add oil and salt, then mix.
  4. Thinly slice the frankfurters/hot dogs and chop the parsley. Add these to the potatoes along with the breadcrumbs. Mix well.
  5. Divide the ‘dough’ into balls the size of a tennis ball. Gently flatten each ball to form a disk. Arrange these on a baking sheet lined with parchment paper.
  6. Using a small glass, make a slight hollow in the center of each potato disk. Sprinkle some breadcrumbs in the hollow, add diced provolone or smoked mozzarella, and place an egg yolk on top.
  7. Bake at 180°C (350°F) for about 10 minutes.
  8. Once the potatoes are ready, remove them from the oven and serve while the cheese is still melted and stringy.
