Eggs and peas delicious second course, in one pan you will have everything eggs and side dish, one dish in short !!! You can use fresh peas, frozen ones or if you are in super hurry you can use canned peas although honestly the taste will not be quite the same. The cooking of the eggs is always subjective. We prefer them soft, so we can dip bread into the runny yolk . If you prefer your eggs well-done, simply continue cooking until they reach your desired doneness.

Ingredients:

  • 300g (10.5 oz) Green peas
  • 50g (1.75 oz) Onions
  • 4 Eggs
  • 3 tablespoons Extra virgin olive oil
  • Salt, to taste
  • Water, as needed
  • Parsley, for garnish

How to make Eggs and peas:

  1. Start preparing the Eggs and Peas, clean the onion and chop it finely, also wash the parsley, remove the stems and chop it finely.
  2. Pour the extra virgin olive oil into a pan, add the onion and let it season for a couple of minutes and then add the peas, water salt and chopped parsley, cook for about 10 minutes stirring occasionally.
  3. Shift the peas slightly so that you get 4 holes where you will pour the eggs, spacing them apart, cook them until the egg white has set, the cooking of the yolk on the other hand varies according to your tastes and habits, because I for example like it soft my husband likes it well cooked.
  4. When the eggs and peas are ready serve them piping hot accompanied by slices of bread for scrapple.
