Think that you will give a little joy as well to those who follow a controlled diet, because you will present them with a dish suitable for their needs, thanks to its lightness. The procedure is not excessively long, however, we still advise you not to get to work at the last minute, then the steps are very clear and intuitive and you should have no problem following them. In other words, just put some effort into it and you will get a great result.

Ingredients:

  • 500g (1 lb 2 oz) lean minced beef/ground beef
  • 3 courgettes/zucchini (weighing about 750g/1 lb 10 oz)
  • 50-60g (1.75-2 oz) grated cheese (such as light Galbanino or mild cheddar)
  • 2 eggs
  • 1 carrot, peeled and grated
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • ⅓ teaspoon sugar
  • A drizzle of extra virgin olive oil
  • Fresh dill, chopped, to taste
  • Salt and pepper to taste

How to make Zucchini casserole with baked ground beef:

  1. First, trim the zucchini, grate them into a bowl, salt them, mix well and let them stand for 5-10 minutes.
  2. In the meantime, pour a drizzle of oil into a nonstick pan, insert the diced onion, add the sugar, stir, brown it, after which turn off the stove.
  3. Now squeeze the zucchini, transfer to a clean container, add the grated carrot (raw and peeled), onion, chopped dill, minced meat, eggs, garlic powder, pepper and salt.
  4. Now mix properly with a spoon, then knead with your hands and continue working until you have a nice smooth mixture.
  5. Having done this, roll out the dough into a well-oiled round ceramic mold, then bake in a preheated oven for 40 minutes at a temperature of 180 °C (350 °F).
  6. Finally, precisely after 30 minutes, sprinkle the flan with grated cheese and bake for the last 10 minutes before bringing to the table.
