Very fluffy and indispensable Chocolate Brioche Buns for a great breakfast to make at home perfect for the whole family but also ideal to take to the office for a sweet break. The dough is the classic brioche dough but with seed oil and not butter. It is made in a bowl by hand so it has to be kneaded 10 minutes longer but you can do the whole process in a planetary so much faster. The chocolate rolls made this way are really soft and delicious, you will eat them in a few days if not a few hours and you will see them again. Unlike donuts or doughnuts they are baked so not fried, lighter and you can indulge in them once more.

Ingredients for Chocolate Brioche Buns

Makes approximately 16 buns

  • 250g (2 cups) plain flour / all-purpose flour
  • 250g (2 cups) strong bread flour / bread flour
  • 80g (⅓ cup) caster sugar / granulated sugar
  • 2 large eggs
  • 180ml (¾ cup) lukewarm milk
  • 80g (⅓ cup) vegetable oil, at room temperature
  • 15g (0.5 oz or 1½ teaspoons active dry yeast) fresh yeast
  • 100g (½ cup) chocolate chips
  • For brushing: 1 egg yolk mixed with 2 tablespoons of milk

How to make Chocolate Brioche Buns:

  1. In a large bowl, mix together the sifted flours, sugar, and crumbled yeast.
  2. Add the oil to the dry ingredients.
  3. Start kneading the mixture.
  4. Gradually add the milk while continuing to knead.
  5. Knead by hand for a few minutes until you get a smooth dough.
  6. On a pastry board, form the dough into a circle and add the chocolate chips in the center.
  7. Fold the dough over the chips several times to incorporate them.
  8. Form a smooth ball and place it in a bowl. Cover with plastic wrap and let it rise for 2-3 hours, or until doubled in size.
  9. Once risen, transfer the dough to a pastry board.
  10. Form the dough into a long sausage shape and divide it into balls of about 50g each.
  11. Arrange the balls on a baking sheet lined with parchment paper. Cover with foil and let them rise for another 30 minutes.
  12. Preheat the oven to 180°C (355°F) for conventional ovens or 170°C (340°F) for fan ovens.
  13. Brush the surface of each bun with the egg yolk and milk mixture.
  14. Bake for about 20 minutes.
  15. Once the Chocolate Brioche Buns are ready, let them cool completely before serving.
