Very tasty Spinach Meatballs: You Can’t Resist…

We like meatballs in all kinds of ways, even vegetable meatballs are very tasty and today we propose to prepare crispy spinach meatballs! A perfect appetizer or main course to be made fried (also baked as per the advice at the bottom of the recipe!), a delicacy that brings everyone together at the table, vegetarians or not!

Ingredients:

  • 600 g (1 lb 5 oz) Spinach
  • 80 g (2.8 oz) Grana Padano DOP cheese
  • 1 Medium egg
  • 1 Garlic clove
  • To taste Salt
  • To taste Black pepper
  • As needed Extra virgin olive oil
  • 60 g (2.1 oz) Breadcrumbs
  • As needed Peanut oil for frying

For breading:

  • 2 Medium eggs
  • As needed Breadcrumbs

How to prepare Spinach Meatballs:

  1. Heat a skillet, add a drizzle of oil and a whole clove of garlic.
  2. Heat slightly, then add the cleaned spinach.
  3. Cover with a lid and cook for about 3 minutes, or until tender.
  4. Remove the lid, let the spinach dry of the cooking liquid for about 1 minute, and season with salt.
  5. Allow the spinach to cool and shred it with a knife.
  6. Place the shredded spinach in a colander to drain, pressing down with a spoon.
  7. Once drained, place the spinach in a bowl and add the egg.
  8. Add grated Grana Padano DOP.
  9. Add breadcrumbs.
  10. Season with pepper to taste.
  11. Mix everything until smooth.
  12. Form into balls of 20 g each.
  13. Bread the meatballs by first dipping them in beaten egg.
  14. Then roll the meatballs in breadcrumbs.
  15. Fry a few meatballs at a time in seed oil heated to 170°C (340°F) for about 3 minutes. Use a kitchen thermometer to measure the oil temperature.
  16. Drain the meatballs when golden brown.
  17. Lay the fried meatballs on paper towels.
  18. Serve the spinach meatballs hot or warm.
