  • 2 very fresh egg yolks, at room temperature
  • 1 lemon, juiced
  • 1 cup vegetable oil
  • 1 teaspoon white wine vinegar
  • Black pepper, to taste
  • 1 teaspoon fine salt

How to make the Best Homemade Mayonnaise :

  1. To prepare the mayonnaise, place the egg yolks (at room temperature) in a bowl with high edges, add a few drops of lemon juice, and start whisking them lightly with an electric beater at medium speed to give body to the yolks.
  2. At this point, pour the oil in a thin stream, gradually and without haste, to avoid making it go crazy. Add a bit, wait for it to be incorporated, then add more; it’s important not to pour the oil all at once, or the mayonnaise might go awry.
  3. Once you’ve added about 40-50% of the vegetable oil, the consistency of your mixture will already be quite thick, so dilute it with the remaining lemon juice, adding it little by little.
  4. Continue pouring the oil gradually and in stages. Now that the mayonnaise is ready and emulsified, add the salt, a pinch of black pepper, one and a half teaspoons of white wine vinegar, and mix again with the beater for a few seconds, always at medium speed.
