Fluffy Pancake Recipe no Sugar, and SO easy!…

Pancakes again today! This time, however, sugar-free fluffy pancakes, as texture and taste are the same as the original ones. I slightly modified the traditional ingredients trying to spaddle pancakes with less calories, healthier, but delicious all the same. Well, I loved them and will definitely make them again very often, also because they are ready in no time and can be enjoyed either hot or cold. I served my pancakes with Greek yogurt blended with a little cherry bolero, zero-calorie raspberry syrup and fresh cherries. You can spread the sugar-free pancakes with a fruit coulis, maple syrup, honey or sugar-free jam-they’ll be just as good. Here’s how I made them.

Ingredients for Fluffy Pancake Recipe no Sugar :

  • 1 Egg
  • 1 large egg white (30g)
  • 2 teaspoons Coconut Oil (10g)
  • 4 teaspoons Rice Flour (20g)
  • 2 teaspoons Wheat Flour (10g)
  • 2 teaspoons Stevia (or another sweetener)
  • 4 drops Vanilla Essence (or another flavor)
  • 1 teaspoon Baking Powder for cakes
  • 2 tablespoons Semi-skimmed Milk (or plant-based milk)

How do I make a Fluffy Pancake Recipe no Sugar :

  1. I separate the yolk from the egg white and whisk lightly with the stevia and vanilla essence.
  2. I add the milk and coconut oil to the yolk and mix with a whisk.
  3. I add the sifted flours and baking powder to the mixture and mix well.
  4. I whip the egg whites stiffly and incorporate in small portions into the mixture, trying not to disassemble.
  5. I heat a nonstick skillet very well, lower the flame to low, and pour about 3 tablespoons of the mixture. I cover and let it cook for about 3 minutes. Once air bubbles appear on the surface of the pancake, I turn very carefully and continue cooking with the lid on for another 2 to 3 minutes.
  6. I serve the pancakes hot with yogurt cream, fresh fruit and raspberry syrup with 0 calories (garnish to your good liking).
