Cooking pasta releases starch, which is why the water in the pan looks slightly milky. Refrain from adding water to sauces, opt instead for this water with starch to give sauces a certain consistency without adding other ingredients. Plus, the starch helps the sauce stick better to the surface of the pasta, which helps you eat better without the sauce sitting at the bottom of your plate. Also, the secret behind tasty pasta with a nice texture is not to use too much water when cooking it and not to cook it until it is too soft. Recipe for a delicious tomato sauce for pasta

Ingredients for the recipe for pasta with tomato sauce:

  • 1/3 lb. fresh tomatoes
  • 1 lb. tomato puree or strained tomatoes
  • 1 clove of garlic
  • Fresh or dried rosemary
  • Fresh or dried basil
  • Hot peppers
  • ½ cup of extra virgin olive oil

Heat the olive oil in a frying pan, add half of the peeled and finely chopped garlic, then the fresh tomatoes cut into small cubes. Let the tomatoes sit for a few minutes until they start to fry around the edges, then add the pureed fresh tomatoes and a cup of water. Add the chili to taste, a sprig of rosemary and a sprig of basil, sugar, salt and pepper at the same time and simmer the tomato sauce over low heat for about an hour. At the end, after you turn off the heat, add the rest of the finely crushed garlic, cover the sauce and let it rest to season with the garlic.
