This Torta cookies is a light, tasty dessert that can be prepared in a very short time. It is very similar to the famous American chocolate chip cookies. It can be part of a healthy breakfast or snack for adults and children alike. Children love them. If you don’t have a lot of time on your hands, this recipe can be prepared in just a few minutes and is really very easy to make.

What’s more, it can also be cooked in a frying pan over medium-low heat for around 15 minutes, not just in the oven. It’s a dessert that doesn’t have many calories, so it can be eaten without too much guilt. Although very similar to cookies, this Torta has a soft, chewy texture. Each portion of this Torta contains just 150 kcal, ideal even for dieters. But now let’s have a look at the recipe!

Ingredients :

  • 2 eggs
  • 60 g rice or plain flour (1/2 cup)
  • 1 teaspoon vanilla
  • 3 tablespoons stevia sweetener (or 6 tablespoons ordinary cane sugar or honey)
  • 2 tablespoons olive oil
  • 1/2 teaspoon baking soda
  • 50 g dark chocolate chips or pieces
  • 1 tablespoon lemon juice

How to prepare the Torta cookies:

  1. To prepare this giant Torta-cookies, let’s start by cracking the eggs into a bowl, adding a teaspoon of vanilla extract, 3 tablespoons of sweetener, olive oil and mixing with a hand whisk.
  2. When the ingredients are well blended, add a tablespoon of lemon juice, the sifted rice flour and baking soda, and mix well until creamy.
  3. Preheat the oven to 180°C and prepare a 20 cm-diameter baking tin lined with baking parchment.
  4. Pour the mixture into the tin, add pieces of dark chocolate to the mixture and bake at 180°C for around 15 minutes. To check doneness, always use the toothpick test.
  5. Once the torta-cookies is cooked, remove from the oven, leave to cool, unmould and serve in slices.
