  • 1 cauliflower
  • 500 ml white wine
  • 500 ml vinegar
  • 1 bay leaf
  • 1 tablespoon black peppercorns
  • 1 handful of coarse salt
  • Salt to taste

How to Preserve Cauliflower for the Whole Year:

  1. Firstly, detach the cauliflower florets from the stem, then place them one by one in a bowl of salted water with a handful of coarse salt and let them soak for 1 hour.
  2. Next, transfer the cauliflower florets to a saucepan of salted and peppered water with peppercorns, bring to a boil, cook for no more than 5 minutes, drain them, and pat them dry gently with a kitchen towel.
  3. Now, place the florets in a bowl with very cold water to stop the cooking and keep them crunchy. Pour the vinegar and wine into a clean saucepan, add the bay leaves, light the fire, bring to a boil, then turn it off.
  4. Finally, place the cauliflower florets in a sterilized glass jar, add peppercorns, bay leaves, and the boiled wine and vinegar, seal with the lid, turn it upside down, and let it rest for 3 weeks before opening and enjoying them.
